Ingredients
  • 2 lbs of raw lean ground turkey
  • 1 cup all natural mild salsa
  • 1 cup cooked quinoa leave this out if following #paleo and add an extra egg
  • 2 eggs lightly beaten
  • 3 cloves of garlic finely chopped
  • 1 tsp of Himalayan sea salt more or less to taste
  • 1 tsp ground black pepper more or less to taste
  • 1 cup Spinach chopped
  • 1 cup carrots finely chopped
  • fresh parsley for garnish
  • 3 cups tomato sauce optional; I love Monte Bene Tomato Basil sauce for a store bought brand it's all natural with no add sugar or salt

Instructions
  1. Preheat oven to 375 F
  2. Combine Turkey, Salsa, Quinoa, eggs, garlic, salt and pepper in a large bowl
  3. Shape mixture into a shape of a loaf and place into an ungreased 13 x 9 inch baking pan (place a small amount of optional tomato sauce on the bottom of the pan if used)
  4. Top meatloaf with remaining tomato sauce (optional)
  5. Bake for 60-70 minutes, or until center is no longer pink and meat is cooked through
  6. Let stand 10 minutes before serving
  7. Serve garnished with fresh parsley
